Weekend Cooking ~ Friend & Pumpkin Goodness :)



Some of you will have seen my post on Monday, a package arrived all the way from Arizona from my sweet friend Julie at The Tucker-Wolek Clan

Some of you may not get my excitement ... we don't have canned pumpkin in Australia and I was surprised at how real nice it was. Sounds silly, the only ingredient in this brand is pumpkin but sometimes tinned stuff can be a bit 'meh' but it smelt and tasted fresh!! Are all brands like this?? I'm now wishing we had it here :)


Julie included a really quick, simple recipe for PUMPKIN MUFFINS from a friend of hers


Toss 1 can of pumpkin & spice cake mix into bowl with 3/4 cup water and mix. There was enough mixture for 12 muffins and 6 mini muffins (these I baked for approx 6 mins)





Not sure if this is how they're supposed to look? Mine didn't turn out the prettiest but they sure smelt good ...cinnamon-y & spicy!


And oh they were so yummy warm with a good dollop of butter lol. Very moist and they didn't taste like a packet mix. I can't wait to try something else with the other can ... Pumpkin Frappe, Pumpkin Bars with Cream Cheese Frosting?? (thanks for recipe Nise) ... fun, fun, fun!!

  1. I'm a North American living in Australia, so I get pumpkin, especially pumpkin pie. I actually just used pumpkin, not the canned stuff, when I was back home, but you can go to USA foods here and get all sorts of American products! It's fantastic. They have canned pumpkin there as well.
    And now thanks to this blog, I'm off to make a pumpkin pie! There goes the diet! : )

    1. Oh wow USA Foods, is that in Melbourne?? I'm off to check if they have an online store for interstate ordering ... fingers crossed!! Hmm Pumpkin Pie, maybe that's next. I'm so glad you found my post so .... encouraging lol ;)

    2. Yep! There's a shop on Balaclava and Napean just across from the big white building on the corner. Council building I think or library? I haven't been to that one yet! The other I know of is in Moorabin! Enjoy!

  2. I only recently acquired a taste for pumpkin. I have made all kinds of pumpkin muffins and bread this fall and then made a pumpkin cheesecake for Thanksgiving. I can't get enough! Glad you finally got to try some!

  4. You can use canned pumpkin for pie but it's also good as a base for soup. I always have a can or two of pumpkin puree in the house.

  6. I only buy Libby's so I couldn't tell you how the rest taste. Everyone I know who bakes only uses Libby's canned pumpkin!

  11. Yep, canned pumpkin is great, especially for pies and muffins (as you've just discovered). That a good thing, because it's a pain to puree your own.

  15. I love that your friend from the USA sent you canned pumpkin! Yay! I mostly make my own fresh pumpkin puree, but I have used Trader Joe's organic pumpkin puree and it is as good, if not better than Libby's. So I'd have to say yes, most canned pumpkin in the US tastes like that.

  16. Canned pumpkin! It does smell and taste fresh, and having done the baking and scraping out of pumpkin flesh from the real thing, I can tell you that it saves hours for the same exact product. So glad you're getting a chance to play with these recipes!

  17. while I do like to start with a fresh pie pumpkin, they can be a disappointment at times. Canned pumpkin is a great choice. It tends to be a more concentrated flavour and the texture is nice and smooth. Good for all sorts of uses.
